This song was first released as a country song by Jody Levens in 1953. The Hawketts (with Art in lead vocal and piano) released their version of the song in 1955 (though some sources say 1954.) The track was recorded in a studio at radio station WWEZ and has continued to be a Mardi Gras standard for over 60 years. It is available on several collections including: "Treacherous: A History of the Neville Brothers" (Rhino Records R2 71494-2) and "The Neville Brothers - Gold" (Hip-O Records B0004539-02)

This is an alternate take, which lacks the sax on the intro. The lyrics “If she's smiling, beefsteak become well done” appears as the final line of the song, rather than in the middle (where it is heard on the two released versions.) This single version opens with prominent saxophones playing a triplet pattern. These saxes remain more prominent throughout the single and one of them performs a solo, beginning at approximately 1:05 into the song. There are a couple very minor lyrical differences between the two versions, but the biggest difference is the liberties that Art takes with the song’s melody. In 1960, Williams released a song on the Chess label titled “Oh Baby.”  This is NOT the same song. This is take 1 of a track that would eventually evolve into the song "Jenny Lee" (which itself remained unreleased until it finally saw the light of day on “Slow Down With Larry Williams - The Missing And Unissued Sides” (Specialty Records – date unknown) By the time the song has evolved into “Jenny Lee,” Art was no longer involved. This version is alleged to be the original mono single edit, but I do not believe that claim. It runs 3:22 and is the same as the unedited master except that it fades out early. The only single mix I’ve ever heard is the one which edits various sections of the master into a 2:20 track. This version was released on Real Gone Music’s “A Message From The Meters” compilation.
